This healthy skillet with chicken sausage, brussels sprouts & apples can be made in less than 15 minutes. A quick and healthy one pan meal! (Gluten Free, Paleo, Dairy Free)
Happy Monday friends! How was your weekend? Mine was pretty boring and uneventful, just a normal weekend. On Saturday morning I taught a workout and when it was finished got my own workout in, which I shared on IG.
I know you guys are kind of split on the weekend recap thing, so, I’m trying to share more on social media so we can get down to business here. I don’t know what kind of business, but still, business.
Then I spent the afternoon getting my hair did! I used to have to get my hair done every 6 weeks, but now my stylist has gotten down so that I only need to come in once every 12 to 16 weeks! That’s a big deal to me and I love my hair more than I ever loved it before. Here is the picture my hair stylist posted on his IG, so I guess he likes it too!
I love that he kept the length but took out some of the heaviness in the back by adding layers and texturizing a bit. It was getting super heavy, I had to readjust it like 5 times during a workout, which isn’t exactly ideal. I love the length though so I was super happy we were able to lighten it up a bit without losing the length!
Saturday night we had a roaring crazy night, we got burgers at Whole Foods and then did a little grocery shopping. I know, don’t judge, I’m a party animal. Sunday was very very laid back. I did some grocery shopping, then some meal prepping, we had brunch at home and went to mass in the afternoon. Crazy times!
This morning I had planned to get a workout in at 6 am, while I got up and was ready in time I decided my body wasn’t ready for heavy lifting that early. I decided to work on this post first and then hit up a 9 am class. I’m not sure if I’ll ever be able to make it back to a 6 am workout. Now, on to the one pan no-nonsense Monday recipe!
This post was originally posted in January of 2014, so needless to say, the photos needed some serious updating. The ones taken in our apartment kitchen, two months after we got married with my point and shoot were not doing it justice.
I intended for us to eat it for dinner on Sunday night, but Mr. Hungry requested it for his lunch. So, I combined it with some leftover quinoa pilaf and bam his lunch is done all week!
So dinner ended up being a salad with another package of these chicken apple sausages (I used the ones from Trader Joe’s on top of a massive salad with goat cheese. I must say, I do pretty well at improvising. For fun, here is a pic from teh original post.
Have you ever used caraway seeds? It’s one of the oldest spices traditionally used in baking, the seeds are also known as Persian cumin or meridian fennel, and are the same seeds found in rye bread.
Similar to almost all spices, caraway seeds are packed with tons of nutrients and health benefiting properties. Also similar to other seeds & spices, caraway seeds are a rich source fiber, phytochemicals, antioxidants, trace minerals, and vitamins.

Chicken Sausage with Sautéed Brussels Sprouts and Apples

Ingredients
- 1 tablespoon avocado oil
- 12 ounces chicken apple sausage I used Trader Joe's
- 1 package shaved brussels sprouts
- 1 cup shredded green cabbage
- 1/2 cup chopped onion optional
- 1-2 fuji apples thinly sliced, I used my mandolin
- 1/3 cup water
- 1 tsp caraway seeds
- 1/4 tsp lemon pepper
- salt I used a sprinkle of garlic salt
- parsley for garnish, optional
Instructions
Brown chicken sausage in alarge skillet (one that has a lid) in oil on medium high.
Once browned add remaining ingredients and cook covered for 5 minutes, stirring occasionally. Meal is done when brusselssprouts are tender.
Serve immediately.
